I love to cook sweet potatoes in the instant pot. They are one of my favorite vegetables. In fact, my whole family loves them. That’s quite impressive to find a vegetable that all 8 kids love and want to eat. I kind of feel like some sort of super hero mom winning at life when we fix them with a meal.
Do you have an Instant Pot yet? We’ve had ours for over a year now and use it almost daily! It saves us so much time and when we’ve failed to plan supper ahead of time (ahem), we can throw a meal together in a jiffy.
The coolest thing about an Instant Pot is that the foods cooked in it hold up 90% of their nutrients as opposed to other cooking methods where most nutrients are lost. Oh, and they are stainless steel so there is no leeching of nasty chemicals into your food. This is super important to us.
This brings us to cooking one of our favorite things- sweet potatoes. Now, we usually make a huge bowl of mashed sweet potatoes with butter, cinnamon, and raw sugar. Mmmmmmm, my mouth is watering now. This works well for our large family.
How to Cook Sweet Potatoes in the Instant Pot
The sweet potatoes can be cut up or cooked whole. We usually cut them up because we make them all in one bowl but if you want to have individual potatoes, you can leave them whole.
The first thing we do is wash our sweet potatoes off. We don’t peel them before cooking, the peels will fall right off when the potatoes are done. If you are going to cut the potatoes up for cooking, you may want to cut off the ends and discard (compost, feed to critters, etc….). The sweet potato ends tend to be a little fibrous so this helps with the texture.
Place 1 cup of water in the bottom of the Instant Pot and place the metal rack in. Now, set your whole potatoes or potato pieces on top of the rack.
Set the pressure to manual high for 40 minutes. Now, we fill it full of potatoes, for just a few, you may need to just cook them for 20 minutes. Once the Instant Pot finishes cooking, you can manually release the pressure. Just watch out for the steam, you don’t want to get burned.
For whole potatoes, simply remove from Instant Pot and serve in your favorite way. For cut up sweet potatoes, carefully remove with a large spoon and pull peels off. We use tongs to do this part. Remember, the potatoes will be very hot.
Cooking sweet potatoes in the Instant Pot has been something that has really benefited our family. I’m all for any kind of kitchen hack that makes meal prep and cooking easier and this is one at the top of my list.
